New Cheeses for Spring at Oxbow Cheese & Wine Merchant

Spring is finally in the air at the Oxbow Cheese & Wine Merchant! With this beautiful weather and sunshine comes some fantastic seasonal cheeses from our own backyard.

Here are some of the newer seasonal favorites:
St. Pat, from the Cowgirl Creamery in Petaluma, CA. This luscious, soft-ripened brie style cheese, is made with the rich buttery milk from a herd of Jersey cows, tended by John Taverna, a local dairy farmer. The small wheels are then wrapped with the leaves of the Stinging Nettle plant. Once the leaves have been flash frozen, to relieve the “stinging” from the Nettles, they are wrapped around the cheeses during their brief aging period. Imbuing the rich creamy cheese with a light vegetal flavor and a subtle hint of artichokes.

Andante Dairy, also out of Petaluma’s fertile dairy lands, is finally back in stock! Tomme Dolce, an all time favorite of the staff at the Cheese & Wine Merchant, is one of the only aged goat milk cheeses produced by Soyung Scanlan, the head cheesemaker at Andante Dairy. Tomme Dolce is coated and rubbed with a blackberry or plum preserve on the rind, lending subtle notes of sweet fruit to the salty, tangy and caramel notes of the goat cheese. Tomme Dolce will only be available for a little while longer, so stop by to grab a chunk while you still can. Also, try some of their softer more delicate French influenced goat and cow’s milk cheeses that are a must try for cheese lovers of all types.

There is also a new creamery in Sonoma County, Moonside Creamery, from Sebastopol, CA. Their newest cheese, Lunetta, is another wonderful addition to all the fantastic cheeses produced in the area. Lunetta is a natural rind cow’s milk Tomme with a firm texture that may sometimes develop crunchy tyrosine crystals. The cheese offers bright flavors of citrus and cultured butter with a savory, long finish.

During the month of March Oxbow Cheese & Wine Merchant is pairing this cheese with a locally produced Tannat wine that is part of their March wine club selection. The high-toned, salty notes in this cheese bring the ripe cherry fruit in this hearty California Tannat-based blend to the forefront while pleasantly softening its tannins.

Tokaji Dessert Wines from Oxbow Cheese & Wine Merchant

Oxbow Cheese & Wine Merchant has in stock a fine and rare collection of fine Tokaji dessert wines from the historic region of Tokaj, Hungary. Many Americans reflexively dismiss dessert wines out of hand, in the mistaken notion that admitting they enjoy them somehow brands them as unsophisticated. In fact, nothing could be further from the truth, as some of the world’s most collectible, age-worthy and treasured wines are sweet. Tokaj has centuries of fame and was a favorite of the 18th Century French kings, the Hapsburg Court, and the Russian Tsars – so much so that it has come to be known as “the wine of kings and the king of wines.” These delicious wines can be served with simple fruit-based desserts such as poached pears or an elegant tart. They’re back… The Oxbow Cheese & Wine Merchant has started receiving some of the seasons first batches of Rush Creek and Winnimere! These are the wonderful domestic versions of the classic and famous Vacherin Mont d’Or, from the Jura Mountains that border France and Switzerland. Rush Creek is from Uplands Creamery in Wisconsin. Winnimere is from Jasper Hill Farms in Vermont. Both are amazing cheeses filled with deep unctuous flavors, notes of bacon and beef, and an earthy pungent aroma. They are washed on a regular basis in a salt water brine, developing that funky reddish rind. They are then wrapped in a layer of Spruce Cambium, the thin layer of bark found between the harder more course outer bark and the inner heart of the tree. These cheeses are a must have for any Holiday parties with cheese lovers. You may also just enjoy with a couple friends, a baguette and a bottle of bubbles! Cheers and Happy Holidays everyone!

Fresh Truffles for the Holiday Season

The Oxbow Cheese & Wine Merchant is delighted to offer all you fungi lovers out there the opportunity to order fresh truffles throughout this holiday season! Currently the extremely rare and sought after white Alba truffles (Tuber magnatum) are available, as well as the fall Burgundy truffles (Tuber Uncinatum). They will be sold by the ounce and are a pre-order item.

You can just drop by the Cheese & WIne Merchant and place your order with a staff member, or contact Justin at 707.257.5200. Your order will need to be placed by Tuesday, or no later than noon on Wednesday, to have it ready for pick up by the following Thursday. This way of pre-ordering will ensure you receive your truffles in the freshest and highest quality possible. Prices will vary, so inquire when ordering or anytime before.

Also, around mid-December, depending when they come into season, the Cheese & Wine Merchant will also have available the black winter Perigord truffles.Let the the Truffle parties begin!

Also, for the first time this year Beecher’s handmade cheese, located at Pike Place Market in Seattle, WA, has released its seasonal Flagsheep cheddar! This is a wonderfully delicious sheep’s milk version of their Flagship Reserve, a handmade cow’s milk clothbound cheddar made in the fashion of traditional English style cheddars.

Bishop’s Peak Cheese from Paso Robles

During October, Oxbow Cheese & Wine Merchant is featuring a brand new cheese, Bishop’s Peak, from the Central Coast Creamery in Paso Robles. Owner, operator and cheesemaker Reggie Jones began his career in cheese doing product development and quality control, and dreamed of one day creating his own small-batch artisan cheeses. Jones and his wife now specialize in making aged cow, goat and sheep’s milk cheeses, produced from local, hormone-free milk. Jones believes in the rich potential of high quality milk, and has a mission to introduce the American palate to flavors found in the best cheeses of Europe. Named for a popular Central Coast landmark, Bishop’s Peak is Jones’ take on the famed traditional cheeses of the European Alps. It is made strictly from the milk of cows at the Cuyama Dairy, which has been in business for over 60 years and is the last dairy in Santa Barbara County. The cow’s grass and high carrot diet gives the cheese a distinct yellow paste, and flavors that range from sweet to earthy. Its sweet, caramel flavors and creamy mouthfeel make this cheese an instant crowd pleaser. Try melted on a hot sandwich or grilled cheese, or just out on a cheese board for hors d’oeuvres. Greek Cheeses at Oxbow Cheese & Wine Merchant

The Oxbow Cheese & Wine Merchant is proud to be featuring two fantastic cheeses, both from Greece, and perfect for the end of summer season.

Halloumi is one of the top export commodities of Greece. This cheese has a mozzarella consistency (almost rubbery in texture) and with its high melting point makes it the best cheese on the market for grilling or frying. Made from cow, sheep and goat’s milk, Halloumi is mild but not without flavor and character. Use it with grilled lamb sausage, or pair in a salad with fresh heirloom tomatoes, which are still in season! Halloumi has many applications…let your imagination run with this one to make a delicious appetizer or main course for any grilling occasion.

Greek Feta from the island of Lesbos, is imported by the famous Essex St. Cheese Co. based in New York. This is a very special feta indeed. Made from 100% sheep’s milk, which is a rarity. All Greek feta, by law, is required to be made with a minimum of 70% sheep milk and the rest with goat’s milk. The woman who founded Essex St. Cheese Co., Daphne Zepos, tragically passed away way before her time from cancer. In honor of Daphne, and her Greek heritage, her partner Jason Hinds decided to source a high quality feta that she would be proud to represent under the Essex St. name. After careful deliberation and research, Hinds selected a third-generation cheese producer from the island of Lesbos, who had never exported his product before. The Essex Street Feta debuted earlier this year, with a percentage of sales going to the Daphne Zepos Teaching Award, created in her honor. This feta is a perfect addition to any summer salad, as well as a great lamb burger!

Tomatoes on the Menu at Oxbow Cheese & Wine Merchant

Summertime is in full effect now, and  is celebrating the season’s first heirloom tomatoes with two new items on its food menu. The classic and always delicious Caprese salad is made with fresh mozzarella “Fiore di Latte” from the Belfiore Cheese Co. in Berkeley, CA, a drizzle of fig balsamic and EVOO, a dash of salt and pepper and, of course, some freshly chopped basil. The second new addition to the menu is the Caprese sandwich. Essentially the Caprese salad on a ciabatta roll, with the addition of some fabulous sliced prosciutto di Parma. For all you non-carnivores out there, you may certainly order it vegetarian style without the prosciutto. Oxbow Cheese & Wine Merchant has also just rolled out, in addition to it existing Wine Club program, a seasonal Rosé wine club. Every month, alongside the regular wine club releases, two new and superb rosé wines will be available for those who enroll. This is a perfect limited club offered seasonally from May through October for you to enjoy. As with the other club types, the selections for the Rosé wine club will feature wines of diverse tastes, varietals, and origins and will be in the dry, crisp style. The Fourth of July is just around the corner. Whatever you have planned, BBQ with friends and family, picnic, or just a quiet night in, the Oxbow Cheese and Wine Merchant has the essentials to make your Holiday a delicious one.
Some fairly new items in stock are the Friend in Cheese Co. mini jams and jellys. A fantastic company out of Santa Cruz who source their fruit and other ingredients for their products from local, organic producers. These little jars are a great accompaniment for all cheeses. The salted watermelon jelly pairs particularly well with bries, triple cremes, and other soft decadent cheeses. Aside from the many accoutrements and rare artisanal cheese beauties found at the Cheese Merchant, do not overlook the many limited production wines and craft brews as well. Blackstone Cheese from Bellwether Farms

Oxbow Cheese & Wine Merchant is now carrying “Blackstone,” a new cheese brought to us by the folks at Bellwether Farms in Petaluma, CA. Blackstone is a blend of cow and sheep’s milk. Its paste is scattered with black peppercorns, giving it a mild boost of spice, and its rind is rubbed with ground pepper, rosemary and vegetable ash. The paste offers the characteristic tang of sheep’s milk, while the cow’s milk offers a caramel sweetness with a rich mouth feel. Blackstone is another great addition to the numerous other local cheeses the Oxbow Cheese & Wine Merchant is carrying right now. Get Cheesy this Valentine’s Day

Don’t think there is a cheese that out there that is perfect for Valentine’s Day? Guess again! Oxbow Cheese & Wine Merchant will have Coeur du Berry, a lovely, fresh goat milk cheese from the Poitou region of France on hand for your special someone. In the shape of a heart, this succulent cheese is from Fromagerie Jacquin, and its name is a nod to the neighboring commune named — most appropriately it seems — St Valentin. Add a crisp white wine or refreshing bubbly and you will be all set!

Cheese for the Holidays

Yep it’s back! Oxbow Cheese & Wine Merchant got its first batch of Rush Creek Reserve in this week. This decadent, luscious cheese is produced by Uplands Cheese Co., an artisan farmstead cheese producer in Wisconsin. Rush Creek Reserve is inspired by the French Vacherin Mont d’Or, and is bound in spruce bark, which gives shape to the soft round and imparts a sweet, woodsy flavor to the cheese. Combined with the savory flavors born from the rind, this gives the custard-soft paste a deep but delicate richness, reminiscent of beef broth or finely cured meat. Perfect for any holiday party, this cheese will certainly be the the star. Only available in small quantities and for a limited time, get a wheel while you can! Oxbow Cheese & Wine Merchant Now Accepting Apple Pay

Oxbow Cheese & Wine Merchant completed the transition to EMV, chip-enabled credit card processing last week, and as a benefit, is now accepting Apple Pay. The U.S. is the last developed country to make the transition the EMV (Eurocard/Mastercard/Visa) standards, and is 10+ years behind the curve in this important credit card security measure. The new equipment and procedures have caused more than a little confusion for both customers and staff at Oxbow Cheese & Wine Merchant. Please remember that it is all in the interest of enhanced credit card security, and that small merchants are at the mercy of the credit card processing industry no less than consumers. Use Apple Pay or one of the other smart phone payment systems — Oxbow Cheese & Wine reports that nothing is faster in completing a purchase.

Smoked Burrata from Bari

Oxbow Cheese & Wine Merchant is receiving limited quantities every two weeks of a delicious, delicately smoked Burrata straight from Bari, the city on the Adriatic where Burrata was invented. If you think regular Burrata is irresistible, just wait until you try this! Each package has two 100 gram cheeses, a perfect size for one. Drizzle with fine olive oil, sea salt and cracked pepper, and you will be transported.”

Cheese Plates To Go

The Oxbow Cheese & Wine Merchant is now offering cheese plates in an easy ready to-go, picnic-style pack. Currently they are available only on Saturdays and Sundays (all food on the menu can be prepared to go as well). There are two varieties of cheese plates with three different cheeses, dried fruit and almonds. You can purchase them in the large container for $15 or grab the smaller size for $10. There is also have a meat plate to go, which comes with Prosciutto, Salami, Pork Rillettes, olives and cornichons.
