Yep it’s back! Oxbow Cheese & Wine Merchant got its first batch of Rush Creek Reserve in this week. This decadent, luscious cheese is produced by Uplands Cheese Co., an artisan farmstead cheese producer in Wisconsin. Rush Creek Reserve is inspired by the French Vacherin Mont d’Or, and is bound in spruce bark, which gives shape to the soft round and imparts a sweet, woodsy flavor to the cheese. Combined with the savory flavors born from the rind, this gives the custard-soft paste a deep but delicate richness, reminiscent of beef broth or finely cured meat. Perfect for any holiday party, this cheese will certainly be the the star. Only available in small quantities and for a limited time, get a wheel while you can!
